Heart-shaped pancakes
If you are thinking of what to do for your loved ones, here’s a treat from Caz. Fluffy heart-shaped pancakes!



Ingredients:

  • 1 cup self-raising flour
  • Pinch of salt
  • 1 cup of water
  • 1 egg
  • 1 cup of milk
  • 1 tablespoon butter (melted)

Preparation:

  1. Sift the self-raising flour and salt into a medium mixing bowl. Make a well in the center.
  2. Whisk together egg and milk in a bowl. Pour ¼ of the milk mixture into the flour and stir with a whisk to make a smooth paste. Slowly stir in the rest of the milk until the mixture is smooth. The trick to fluffy pancakes is not to over stir or beat the mixture, else the gluten in the flour will develop and you will end up with tough pancakes.
  3. Stir in melted butter.
  4. Swirl a little extra butter in a 25 – 30cm non-stick pan. Heat until the butter is melted and bubbles slightly.
  5. Steadily pour in half the pancake mixture. If you pour the batter in a steady stream into the center of the pan, your pancake will be a pretty circle.
  6. Heat the batter on low until large bubbles form. Do not be impatient and try to flip it over before large bubbles form! Flip it over quickly and press down gently. Flick it off the pan when the pancake is a little slightly brown in colour. Repeat with the rest of the batter.

You can serve the pancakes as is, with a squeeze of lemon, a sprinkle of cinnamon sugar and a dollop of vanilla ice-cream. It’s also delicious with some macerated strawberries and butterscotch ice-cream. Or just drown the pancakes in maple syrup. Or have it with chocolate ice-cream sprinkled with crushed malteasers (inspired by Jamie Oliver, the most gorgeous blond chef in England).
